Ingredients

200g bocconcini, quartered
2 tablespoons good quality pesto
4 slices of baguette, toasted
1 tomato, sliced
extra virgin olive oil, for drizzling, optional

Method

  1. Toss bocconcini and pesto in a bowl till well coated.
  2. Top baguette slices with tomato, and mound pesto coated bocconcini on top. Drizzle with olive oil, if desired and serve.
