Love Heart Pikelets with Honey Cinnamon Yogurt Print

Serves 4

Ingredients

1 cup self-raising flour
2 tablespoons caster sugar
½ teaspoon baking powder
250ml Australian milk
1 egg
1 cup Australian Greek style yogurt
1 tablespoon honey
¼ teaspoon cinnamon
butter, for cooking
1 x 425g can plum halves, drained and halved
toasted slivered almonds, for serving
Method

1. Place flour, sugar and baking powder in a bowl. Combine milk and egg, slowly whisk into flour mixture until smooth. Set aside for 10 minutes.

2. Combine yogurt with honey and cinnamon, set aside.

3. Melt butter in a non-stick frypan over medium heat. Using a spoon draw love heart shapes with the mixture in the pan. Cook for 2 minutes each side or until the pikelets are fluffy and golden.

4. To serve, top a stack of pikelets with plums, honey cinnamon yogurt and sprinkle with almonds.


    

Handy Hints
• Substitute cinnamon with ½ teaspoon vanilla if desired
• Substitute plums with canned apricots or fresh seasonal fruits if desire
