| Smoked Chicken and Blue Cheese Tart |

Serves 4 - 6 ![]() Ingredients
30g Australian butter Method
1. Melt butter in a saucepan and add onions and cook for 5 minutes until soft. Add the sugar and season to taste. Cook for a further 5 minutes, or until the onions are caramelised. Remove from heat and set aside to cool.
3. Score a 1.5cm border around the edge of the pastry, but not cutting all the way through. Prick the base with a fork within the scored edges and top with grated parmesan and season to taste. Layer the cooked onion, chicken, pear and blue cheese on top of the pastry base.
