Aromatic Prawn Yogurt Curry Print

Serves 4

Ingredients
1 tablespoon oil
500g green prawns, peeled and deveined
1 red onion, sliced into wedges
3 baby bok choy, cut into quarters
1 small red capsicum, sliced
2 tablespoons Thai red curry paste
200g tub Australian natural yogurt
2 teaspoons soy sauce
2 teaspoons brown sugar
jasmine rice, for serving
extra Australian natural yogurt, for serving
fresh coriander leaves, for serving
Method

1. Heat oil in a pan and cook prawns over high heat for 2-3 minutes until just cooked through. Remove from pan.

2. Add onion capsicum and curry paste to pan cook stirring until fragrant, add bok choy and stir-fry vegetables until tender. 

3. Stir in prawns, yogurt and season with soy and brown sugar, heat through.

4. Serve with steamed jasmine rice. Top with an extra dollop of natural yogurt and coriander leaves .
